Some mums I know create fun shapes with their child's food or let them eat with special "big kid" utensils they picked out to encourage healthier eating. Others swear by letting the kids help prepare meals, so the little ones are more willing to give their meals a taste.

There are some great ideas floating around, it's quite astonishing! I've also found that switching things up works sometimes - like serving meals in new and exciting ways eg. dining in the backyard or picnic-style on the living room floor, or letting them eat with their hands if they want to. Just when you think you've exhausted all options, there's always something else to try!
