Ingredients:
- 2 boneless skinless chicken breasts, cut into bite-sized pieces
- 1 1/2 cups of long-grain rice (I prefer Basmati)
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 teaspoons of olive oil
- 2 cups of chicken broth
- 1 teaspoon of dried thyme (or 3-4 teaspoons of fresh chopped thyme)
- 1/2 teaspoon of dried oregano
- Salt and pepper to taste
- Lemon wedges, for serving

Instructions:

1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until they're browned for about 3-4 minutes on each side. Remove the chicken from the pan and set it aside.

2. In the same skillet, add the onion and garlic, sautéing for about 3 minutes until the onion softens. Then, stir in the rice, ensuring each grain is coated in the oil and cooking for a further 2 minutes.

3. Pour in the chicken broth, thyme, oregano, and season with salt and pepper. Stir everything well, ensuring the rice is properly combined with the liquids. Bring the mixture to a boil.

4. Return the chicken to the pan, reduce heat to low, cover, and simmer for about 15 minutes until the rice is tender and the chicken is cooked through.

5. Serve it up with a squeeze of lemon juice over each portion.
