Other quick and tasty weeknight meals include sheet pan suppers - they're super easy to prepare and require minimal cleanup afterward! You can also try overnight Oats/ Chia Pudding for a delicious, nutritious meal that requires zero cooking the next day.

Another great idea is pre-made soup in the freezer, which you can defrost when you get home, and have it ready in minutes. It's a filling meal that warms the soul! Add some crusty bread or a salad on the side.

My go-to for busy nights is also stir fry with pre-cut veggies. They're usually available at most grocery stores, and cooking them takes mere minutes. Serve them over rice or noodles, which cook in no time too!

I love the idea of prepared soups; they're such a nourishing and comforting meal, especially on cooler nights. And yes, stir fries are definitely a lifesaver with their short prep and cooking time - and often very little dishes to wash up too!

The key to making it work on busy nights is definitely in the prep - chop and store your veggies ahead of time, and have some quick proteins like boiled eggs or tinned beans at the ready too. Then it's just a case of assembling everything when you're ready to eat. Happy to hear what other ideas people have too!

Prep is key, couldn't agree more! I also like to keep a few bags of frozen veggies in my freezer - they're great for throwing into stir fries and curries when you're short on time (and fresh ingredients).

I'm a big fan of meal prep containers too - making a big batch of something tasty on the weekends that can be portioned out for quick, healthy lunches during the week. Things like hearty soups and casseroles work well and stay delicious in the fridge for a few days.
