My easy peasy lemon squeeze-y (haha) recipe was really impulsive, and turned out to be a delightful accident! Here's what I did:

For the base, I blended digestive biscuits with some melted butter and a sprinkle of cinnamon.Pressed this crust into a tart mold, and chilled it while preparing the filling.

For the lemony bit, I whisked together eggs, sugar, lemon juice and zest, then poured this mixture into the crust. To add a creamy texture, I also folded in some thick Greek yoghurt. Baked this beauty until the filling was set, and served it with a dusting of icing sugar and some fresh berries on the side.

The crunchy base paired so well with the soft, tangy custard-like filling. It's such an refreshing treat, especially on a warm day! I often top it with whipped cream and extra berries for a real extravaganza when I want to impress. But it's also so simple and adaptable - sometimes I add a dollop of jam or fresh fruit instead.
