I feel you on the slow cooker front! My go-to recipe is a delicious chicken curry that only requires some chopped up potatoes, carrots and chicken thighs as ingredients. Salads in a jar have been a Godsend, especially during summer! Quick to assemble, refreshing, and super customizable - I make mine with lots of greens, veggies, some fruit, nuts, and grilled chicken.

I'm also a recent convert to sheet pan meals, they're so versatile! Roasted veggies with salmon or shrimp are our go-to's right now, but I can see them being excellent with some spice rubs for flavor profiles from around the world.
