What makes an enjoyable family meal? It needs to be delicious, nutritious and quick and easy to prepare so it can fit into our busy schedules! Share your go-to recipes for enjoyable sit down meals that everyone will love!

I'll start with a hearty salad that's both tasty and healthy - perfect for summer. It's a hit with the whole family and takes only 15 minutes to toss together.

Ingredients:

- 2 cups of cooked chicken, cubed or shredded (leftover roast chicken works well)
- 2 hearts of romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped walnuts, toasted if preferred
- 2 medium pears, diced
- 1/4 cup crumbled blue cheese
- 1 tbsp olive oil and 1 tbsp balsamic vinegar for dressing

Instructions:

Throw the lettuce, tomatoes, walnuts, pears and blue cheese in a large bowl. Toss with olive oil and balsamic vinegar. Top with chicken and serve!

Ingredients:

- 250g spaghetti
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 2 cups baby spinach leaves
- 1/2 cup grated Parmesan, plus extra for serving
- Salt and pepper

Instructions:

1. Cook spaghetti according to package instructions. Drain, reserving about 1/2 cup of the cooking water.

2. In a large pan, heat olive oil on medium heat. Add garlic and cook for a minute until fragrant, then add sun-dried tomatoes and spinach. Sauté until spinach is wilted.

3. Toss in cooked spaghetti with the tomato-spinach mixture. Grate in Parmesan cheese, adding a little of the reserved cooking water to create a creamy sauce. Season with salt and pepper.

Nope - store-bought pesto, straight outta tub all the way; I'm lazy and it's just easier sometimes! But it does have such a great taste, especially with the mayo. A little goes such a long way and it's so flavourful that you really don't need much - definitely a staple in my house for a quick, tasty boost!
