I love creating fusion dishes, drawing inspiration from various cuisines and merging them together. One of my greatest successes was a savory Asian-style chicken tortilla soup. It sounds like a bizarre combination, but it worked amazingly well! I added a few punches of citrusy flavors with yuzu kosho and some fresh ginger, which gave it a lovely tangy twist. Then, to add some crunch, I topped it with crispy fried Shallots and coriander for that extra fragrant fragrance.That's so very true. 1. Spicy Salmon Burger: This was a fun creation because I usually just bake or pan-fry salmon, but wanted to try something different. So, I made a spicy burger patty with freshly grated ginger, garlic, chili padi, and some spring onions for a kick. Topped it off with a creamy avocado sauce - delicious!
2. Lemon Myrtle Chicken: The husband loves native Australian ingredients, so I experimented with this hidden gem. Infusing the chicken with lemon myrtle added a lovely citrusy flavor that was so refreshing, almost like having chicken in a whole new dimension! I served it with a side of charred corn and wild rice for contrast.
3. Chocolate ChiliPepper muffins: I love spicy chocolates, so I attempted to make some muffins with a kick. These babies had a surprise punch of heat from chili peppers, which balanced nicely with the sweetness. They were ideal for an afternoon tea treat!

My cooking adventures are definitely a mix of hits and misses, but I enjoy the whole learning curve.
