Oh yeah, it's an amazing feeling Hmm, let me share a couple of my favorites.

1. Spicy Salmon Burger: This was a fun creation because I usually just bake or pan-fry salmon, but wanted to try something different. So, I made a spicy burger patty with freshly grated ginger, garlic, chili padi, and some spring onions for a kick. Topped it off with a creamy avocado sauce - delicious!

2. Lemon Myrtle Chicken: The husband loves native Australian ingredients, so I experimented with this hidden gem. Infusing the chicken with lemon myrtle added a lovely citrusy flavor that was so refreshing, almost like having chicken in a whole new dimension! I served it with a side of charred corn and wild rice for contrast.

3. Chocolate ChiliPepper muffins: I love spicy chocolates, so I attempted to make some muffins with a kick. These babies had a surprise punch of heat from chili peppers, which balanced nicely with the sweetness. They were ideal for an afternoon tea treat!

These are just a few of my successful experiments. There have also been some duds, but that's part of the fun and learning curve too! I say, keep creating and embracing those culinary triumphs!

Then, to add some crunch, I topped it with crispy fried Shallots and coriander for that extra fragrant fragrance.

Another one-of-a-kind dish I enjoyed creating was a creamy seafood pasta, with a rich sauce made from scratch using a unique combination of herbs and spices. I do have a few simple, failsafe recipes up my sleeve for when I need some cooking comfort. One of them is a good old fashioned chicken stew with lots of roots and herbs. It's hard to go wrong with this hearty warm hug in a bowl, and it's so versatile too because you can switch up the veggies and herbs. Another go-to is baking salmon fillets with a lemon-dill yogurt marinade; it's simple, refreshing, and delicious every time.

I do keep notes on successful dishes with particular emphasis on the ones that bombed instead! Haha. It's like my cooking war stories, but they are good lessons learned!

My cooking adventures are definitely a mix of hits and misses, but I enjoy the whole learning curve. As for other reliable dishes, nothing beats a spicy laksa when you're having one of those mornings...you know, the kind that start with a flood in the bathroom and end with a massive traffic jam. It's my ultimate comfort food, as well as a mood booster, packed with noodles, coconut milk and loads of spices!
 
Laksa is an excellent choice to brighten up a dreary day - the combination of spicy, creamy and savoury flavors coupled with noodles is a comfort in a bowl! The variety of ingredients and spices in it is a real mood booster too, I agree!
