Those are some great ideas! I especially agree on the benefits of meal prepping. It doesn't take much time, but it's so rewarding when you're too tired to cook and have a delicious, healthy meal waiting to be assembled.
My personal favorite is making big batches of soups or stews that can be frozen in portions - they're easy to defrost and heat up, plus they often taste even better after being left to sit in the fridge for a few days.
