I usually prepare fruit and veggie smoothies for a quick, nutritious snack. My toddler loves it because it's easy to drink and looks pretty colorful too. For dinner, fish is a regular staple - baked salmon fillet with some roasted veggies.

As for getting them to eat new foods, I always involve my child in preparing the meals - from shopping for ingredients to actual cooking. They tend to be more willing to try something they've had a hand in making.
