Mini Quiches:
These can be filled with cheese, ham, spinach, mushrooms, or other ingredients that your toddler likes.
Make individual portions by whiting a muffin tin with non-stick spray and then adding small amounts of mix to each space before folding over a quarter slice of cooked bacon or half an egg.

 
They're also super portable which is ideal for lunchboxes, picnics or on-the-go snacks! Just make sure to add a note for your toddler's teacher or caregiver since it has cooked bacon. Have you experimented with making mini quiches with different fillings? Would love to hear about them!
