Meal preparation on busy weekdays is a daunting task indeed. Having a young child further exacerbates the challenge of preparing quick, healthy meals. Here are some of my go-to strategies and recipes which I've accumulated over the years as a freelance writer with a young kid:
Quick Recipes:
1. Peppery Sturgeon Stir Fry: This is a mainstay in my repertoire, using fillets of sturgeon - they cook super quick, less than 5 minutes on each side. I keep things simple by stir-frying with loads of garlic, ginger, and peppercorns, serving it over steamed rice or noodles.
2. Oodles of Odorless Pasta: I'm talking about spaghetti with a simple yet savory tomato sauce. It's a staple that only takes the time to boil the pasta, which is about 15 minutes. I often double the batch as it's great for lunch the next day. To add some punch, I'll occasionally toss in some olives or capers.
3. Chicken Breasts with Chimichurri: This is an easy, flavorful dish with loads of herbs which only takes about 10 minutes to whip up the sauce. I often serve it with a quick arugula salad.
Stocked Ingredients for Flavor:
- Garlic and ginger are my go-tos. They're in most of my dishes and add so much flavor to any dish, especially Chinese stir-fries.
- A variety of herbs like mint, parsley, and dill also give a simple meal a fresh boost. I often have these on hand because they're super versatile.
- Lemon and lime: citrus juices are fantastic for adding a bright, tangy twist to dishes or marathons.
Meal Planning Strategies:
I tend towards spontaneous meal planning, deciding what to cook based on my son's moods and what looks good at the wet market that day. But having a rough 2-week menu plan has helped me minimize last-minute Stress cooking. I don't always stick to it, but it gives me an idea of ingredients to stock up on and reduces the temptation to order takeout.
I also try to keep my pantry stocked with staple foods like pasta, noodles, rice, tins of tomatoes, and various spices. This means I have the basics to throw together a simple meal even without a detailed plan. It's amazing how many meals one can create with a well-stocked pantry!
Another one of my kitchen hacks is pre-cut vegetables stored in the freezer. When there's an ongoing promotion at the supermarket, I'll stock up on mushrooms, carrots, and peppers, slice them up, and freeze them. They're great for throwing into stir-fries or soups in a pinch.
