I'd also suggest themes for the week to keep it really simple - e.g., Taco Tuesday every week, so you know what to prepare and it's an easy meal to chunk prep and make fresh each time.

Also, for anyone who doesn't like eating the same thing daily, switch up the proteins each day but keep the same two or three sides. For example, have chicken Monday, fish Tuesday, and beef Wednesday, but keep the roasted veggies and rice constant - this makes shopping and cooking easier, with some variety across the week.

And finally, I bulk cook meat in advance and freeze individual portions. Then, when it comes to meal time, I just defrost and throw together a quick stir fry or something similar - easy, tasty, and healthy!

The beauty of meal prep is that you can create different themed days to keep things interesting.

For example, Mexican Mondays could include chicken burbowl with all the trimmings - think sour cream, guac, salsa, cheese, and some tortilla chips on the side for crunch.

Italian night could be a hit too, with a pasta salad loaded with veg, or layered bean lasagne.

I also like to do a sushi bowl Sunday - rice, vegetables, salmon, furikake and pickled ginger. It's fun to make your own sushi at home and it stays fresh in the fridge for a quick lunch.

I like the idea of themed nights!

I'd go with a 'Taste of India' for one - filling bowls of fragrant rice and lentil dal, poppadoms and homemade mango chutney, fresh raita and spicy lamb curry.

Or how about an Asian-inspired night? A colourful bowl of sticky sesame chicken or tofu, with rice noodles, loads of veggies and a drizzle of peanut sauce could work well.

And keeping it simple, Greek salad jars packed with juicy tomatoes, cucumbers, olives and feta would be a refreshing and healthy option too.

The 'Taste of India' and Asian nights especially have my mouth watering - so many tasty flavours and colours.

I also love the idea of doing a Greek salad jar, it's such a simple but effective way to get some variety in there, and so easy to prep ahead. All that deliciousness in one handy little jar! I might add some grilled halloumi too for extra yum factor.
