I've been slowly perfecting my seafood stew over the past few months, and I think I'm finally close to restaurant quality. It's a delicate blend of scallops, shrimp, salmon, and just the right herbs and spices to create a creamy yet savory taste bud explosion. I serve it with a side of toasted garlic bread - HEAVEN!

Each time I manage to nail this dish, it makes me feel like an accomplished chef, even though it's pretty much the only elaborate dish I can cook. The boost in confidence helps me experiment more with ingredients and flavors when whipping up quick, simple meals too. So, it most definitely sets the tone for the day's subsequent meals and encourages me to step out of my comfort zone.

Some of my favorite simple yet tasty dishes for group dining are:

- Pasta salads - they come together quickly, feed a crowd, and are a great way to use up leftover proteins/veggies. A go-to is penne with cherry tomatoes, cucumber, feta, olives and a lemony dressing.

- Sheet pan meals! Throw together some chicken breasts, roasted veggies (asparagus, carrots, potatoes), and it's an easy, tasty, low maintenance meal that doesn't create a pile of dishes.

- Veggie/bean burrito bowls are fast, healthy, and delicious. Rice, beans, chopped veggies, some guac and it's a satisfying, quick meal that caters to various dietary needs.

- Baked potatoes/sweet potatoes are an affordable, filling option and can be topped with various ingredients to suit different tastes.

- Omlette/frittata stations are fun - you can prep various fillings in advance and people can customize their own.

These are reliable favorites that I fall back on when feeding a crowd! Would love to hear others' go-tos too!

I'd add chili to the list. It's one pot, fairly simple, and usually feeds several people with minimal effort and maximum flavor. It also freezes well, so it's great when cooking in batches.

Stir-fries are another go-to for a quick, tasty group meal. Again, they're easy to customize and can be adapted to suit different dietary needs/preferences with different proteins and veggies.

For something a little more indulgent, I sometimes do a baked camembert or brie with an array of dips and crackers - it's always a crowd pleaser and great for parties!

I love a good one-pot chili as well. There's just something so satisfying about throwing in everything into one pot, especially when there's minimal prep work required. It's also often better the next day (or two), so it's great for cooking once and eating twice (or thrice)!
