4. Leftovers - Bonus points if the recipe makes delicious leftovers that can be enjoyed as lunches the next day!

My kids love sushi nights! It ticks a lot of boxes for an enjoyable family meal. It's interactive, everyone gets to customize their own rolls , it's fun to eat with chopsticks, and healthy too boot!

We keep the fillings simple: cooked prawns, crabstick, cucumber, and avocado. Everyone has their favorite so it's an exciting, inclusive meal where even the pickiest eaters can find something they like. It also helps introduce variety since sushi meals can be as elaborate or as minimal as you like.

It's also a great way to teach kids about different cuisines and cultures, and an appreciate for Japanese food is a bonus!
